Pasta pesto

It's a typically bright green sauce that originated in Genoa, Italy. This is the kid’s favorite. It’s an easy recipe and you will enjoy it.

Ingredients

Ingredients for the pasta

500g of pasta (1 packet)
100g of cherry tomato or 3 large tomatoes
White cheddar cheese
Pepper
Salt
1 cube of butter

For the Pesto
A bowl of fresh basil leaf
1/2 of cashew salted nuts
3 garlic cloves
Half cup of Virginia olive oil
Half cup of white cheddar cheese
½ spoon of salt
Black pepper

Directions

Method
- Put water in the pot and add 2 spoons of salt, let the water boil and add the pasta.
- Let the pasta cook for 15-20min
-Drain the pasta and add the cube of butter while the pasta is still warm

For the Pesto.

Using a blender, add the basil leaves, garlic cloves, Cashew nuts, shredded cheese, pepper, 1/2 tablespoon of salt and blend them.

- In a pan, add oil, cherry tomato and fry for 2 min or until soften.


-add the cooked pasta and mix well
-reduce your heat and add the pesto mix to the pan and mix well for 2 min.

- To serve, sprinkle the cheddar white cheese on top and enjoy

Note: for a spicy flavor, you can add one hot pepper to the pesto and blend with the other ingredients.
